it’s thanksgiving tomorrow, and i’m taking off bright and early to drive to my family – which means sunday i’ll be getting home late and not in the mood to cook i decided to be kind to my future self and make a nutritious dinner to have on hand next week (and to have for dinner tonight) of carrot and kale split pea soup! another perk of making this recipe is that i am making use of some veggies i have on hand that would have gone bad by the time i get back home for some reason, split pea soup has always been my ultimate comfort food. i seriously love it so much, i could eat it every day, so i can’t wait to come home after a hectic weekend to a home made batch of it! because (as we all know) i’m lazy af, i didn’t even go to the store to get any ingredients for this. just used seasonings i like to have on hand anyway here are all the ingredients i used: 2 heaping cups of split peas 4 large carrots .5 large bag of tuscan kale 2 vegetable boullion cubes 2 cloves of garlic (a small spoon of my pre-minced garlic) generous amounts of pink salt & pepper tj’s 21 salute seasonings (probably about 2 teaspoons) a handful of cilantro i also like to add some random things in there for hidden nutrients, like flax seed meal. i also like to add a little bit of turmeric but that’s completely optional to prepare: bring six cups of water to a boil with the veg bouillon cubes. once the water is boiling just throw everything in there except the kale – turn down the heat to a simmer and let it do it’s thing for about 30 minutes, stirring occasionally after 30 minutes, add in the kale or any other leafy veggies you want let it simmer for another 10 minutes or so, continue to check on it and stir it until it gets to your desired consistency – i like my split pea soup to be pretty mushy so mine probably simmered for 50 minutes to an hour total aaaaaand that’s it, just serve it up or put it into the freezer to save for later! this honestly tasted so much better than i expected. like, it was soooooo so good. if i were to change anything, i might have added more carrots – some potato and onion wouldn’t hurt either! anyway, that’s it! easy, vegan, nutrient dense, split pea soup for the lazy cook happy thanksgiving, i’ll never stop being thankful for veggies -anna 799 comments lazy lady’s matcha latte published 21/11/2017 heyyyy again my fellow health junkies today i’m here to make your life easier in terms of the best thing on earth: matcha for the longest time i would scroll through my instagram feed looking longingly at all the matcha latte’s that healthy food bloggers out there were making, thinking to myself “i wish i had the time and energy to buy a matcha whisk and bowl and slave over it morning after morning”….. until finally i realized i didn’t need all that special equipment and i can do it on my own in under 5 minutes i’m always trying to cut corners in the kitchen if you haven’t noticed… anyway, here’s my lazy girl hack to easy matcha lattes: a blender. just blend your matcha powder with your *still cold* milk (i like cashew or coconut milk) along with anything else you would like to add (my staples are cinnamon, ashwagandha powder, and collagen peptides) when all the powder is dissolved with your milk, put it in your mug or to-go cup and add hot water and you’re all set – i promise it will still be foamy! if i can impart any knowledge it’s this: ** never put the hot water in the blender i did it once. there was hot matcha water everywhere and it was not fun. love & light -anna 35 comments 4 ingredient almond butter and tahini sauce published 15/11/2017 hiiiiiii again my loves! today i have for you this amaazing sauce that someone even as lazy and unprepared as me could make with just 4 staple items in my kitchen!!! yep – tahini almond sauce this is seriously the most nutrient dense sauce (especially in terms of those healthy vegan fats) plus it’s that perfect combo of savory and sweet that gets me right in the heart to make, just mix together with a spoon: tahini almond butter pink salt pepper water this is equal parts almond butter and tahini, and just a dash (or five if you’re me) of pink salt and black pepper, and then just slowly add water until you’ve got your desired consistency!! i used about 2 table spoons of tahini and almond butter but it was too much for one meal – i would say a good amount to feed two! some tips: i put it all in my blender as if i would need to blend it but that was not the move and a fork worked perfectly to combine i’ve heard lemon is good in it too, but i didn’t have a fresh one today so i went without and added in that black pepper instead and it was sooooooooo good!! tonight i had it with a baked sweet potato and veggies but you could use it as salad dressing, dip for crackers or veggies, sauce for any sort of grain (i’m thinking quinoa or buckwheat – my favorites), i’m even thinking it could be good incorporated into some sort of night time porridge…… (i think i smell another post coming) i hope you enjoy this as much as i did!!
